Vegan Chocolate Peppermint Crinkle Cookies



These chocolate peppermint crinkle cookies are vegan and make a great holiday treat. They taste rich and chocolatey with a hint of peppermint. Plus they are simple to make and taste great for both vegans and non-vegans.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil, melted
  • 1 cup granulated sugar
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/3 cup powdered sugar, for rolling

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Mix the cocoa powder, baking powder, salt, and flour together in a medium-sized bowl using a whisk

Melt the coconut oil and mix it with the sugar in a large bowl until the sugar is well mixed in

Pour the applesauce, vanilla extract, and peppermint extract into the bowl with the wet ingredients

Mix the mixture until it is smooth

Mix the dry ingredients into the wet ingredients one at a time until a dough forms

Put the sugar powder in a small bowl

The dough should be rolled into 1-inch balls

Then, coat each ball in powdered sugar

Place the coated balls about 2 inches apart on the baking sheet that has been prepared

Bake the cookies for 10 to 12 minutes, or until they are set and the tops are just a little cracked

Take it out of the oven and let it cool for 5 minutes on the baking sheet

Then move it to a wire rack to finish cooling

Have a glass of plant-based milk with these chocolate peppermint crinkle cookies
