Ingredients:

  • 1 cup almond butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup raw honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt

Instructions:

Line a small square or rectangular pan with parchment paper

In a microwave-safe bowl, combine almond butter and coconut oil

Heat in 20-second intervals, stirring until they are well mixed and smooth

Stir in honey or maple syrup, cocoa powder, vanilla extract, and a pinch of sea salt until fully combined

Pour the mixture into the prepared pan and spread it evenly

Vegan Chocolate Peppermint Crinkle Cookies



These chocolate peppermint crinkle cookies are vegan and make a great holiday treat. They taste rich and chocolatey with a hint of peppermint. Plus they are simple to make and taste great for both vegans and non-vegans.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil, melted
  • 1 cup granulated sugar
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/3 cup powdered sugar, for rolling

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Mix the cocoa powder, baking powder, salt, and flour together in a medium-sized bowl using a whisk

Melt the coconut oil and mix it with the sugar in a large bowl until the sugar is well mixed in

Pour the applesauce, vanilla extract, and peppermint extract into the bowl with the wet ingredients

Mix the mixture until it is smooth

Mix the dry ingredients into the wet ingredients one at a time until a dough forms

Put the sugar powder in a small bowl

The dough should be rolled into 1-inch balls

Then, coat each ball in powdered sugar

Place the coated balls about 2 inches apart on the baking sheet that has been prepared

Bake the cookies for 10 to 12 minutes, or until they are set and the tops are just a little cracked

Take it out of the oven and let it cool for 5 minutes on the baking sheet

Then move it to a wire rack to finish cooling

Have a glass of plant-based milk with these chocolate peppermint crinkle cookies

Easy Slow Cooker Meatball Subs



For a simple dinner, these Easy Slow Cooker Meatball Subs are great. Set the slow cooker to work, then all you have to do is put the subs together and bake them until they're done.

Ingredients:

  • 1 lb frozen meatballs
  • 1 jar marinara sauce
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 4-6 hoagie rolls
  • 1 cup shredded mozzarella cheese

Instructions:

Put meatballs that have been frozen in the slow cooker

Spread the marinara sauce on top of the meatballs

On top, put green bell pepper and onion slices

Put the lid on top and cook on low for 4 to 6 hours or high for 2 to 3 hours

Warm the oven up to 350F 175C after the food is done

Put the split hoagie rolls on a baking sheet

Use a slotted spoon to put meatballs, onions, and peppers from the slow cooker into each roll

Shred some mozzarella cheese and put it on top of each sub

Put it in an oven that is already hot and bake for 5 to 10 minutes, or until the cheese melts and bubbles

Enjoy while hot!

Baileys Mint Oreo Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup Baileys Irish Cream

Instructions:

In a mixing bowl, whisk together heavy cream, whole milk, and granulated sugar until sugar is dissolved

Stir in Baileys Irish Cream and mint extract until well combined

Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency

In the last few minutes of churning, add in the crushed Oreo cookies and continue churning until evenly distributed

  • 1 large eggplant, diced

  • 1 can 400g diced tomatoes
  • Salt and pepper to taste
  • 300g pasta of your choice

Instructions:

Start by heating the oven up to 400F 200C

On a baking sheet, spread out the diced eggplant

Add 1 tablespoon of olive oil and season with salt and pepper

For 20 to 25 minutes, until soft and lightly browned, roast in an oven that has already been heated

Set the eggplant aside to roast while you heat the rest of the olive oil in a large skillet over medium-low heat

Put in the chopped onion and cook for about 5 minutes, until it gets soft

To the pan, add the smoked paprika, dried oregano, and minced garlic

After two more minutes, the food should smell good

Add the roasted eggplant and diced tomatoes and mix well

Let the flavors blend by simmering the sauce for 10 to 15 minutes

Add pepper and salt to taste

In the meantime, cook the pasta until it's al dente according to the directions on the package

After the pasta is done, drain it and add it to the pan with the sauce

Toss the pasta around until it's covered all over

Hot smoky eggplant tomato pasta should be served with fresh basil leaves on top
