Ingredients:
- 1 cup green lentils
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can 14
- 5 oz diced tomatoes
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the garlic, onion, carrots, and celery
For about 5 to 7 minutes, or until the vegetables are soft, cook
Tomato dices, oregano, thyme, basil, salt, and pepper should all be added along with the lentils
Once the soup starts to boil, lower the heat and let it cook, covered, for 25 to 30 minutes, or until the lentils are soft
Check the seasoning and make changes if needed
Serve hot with fresh parsley on top
