Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- For the Orange Curd:
- 1/2 cup fresh orange juice
- 2 teaspoons orange zest
- 1/4 cup granulated sugar
- 2 large egg yolks
- 2 tablespoons unsalted butter
Instructions:
Warm up the oven to 350F 175C and put paper liners in a cupcake pan
Put the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a medium-sized bowl and mix them together with a whisk
Put away
Put the softened butter and sugar in a large bowl and mix them together until they are light and fluffy
Each egg should be added one at a time, and then the pumpkin puree should be added
The dry ingredients should be added to the wet ingredients three times, with the buttermilk coming in between each time
The dry ingredients should be added first and last
Don't mix any further than that
Add the vanilla extract and mix well
Fill each lined cup about two thirds of the way to the top with cupcake batter
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take the cupcakes out of the oven and let them cool for 5 minutes in the pan
Then, move them to a wire rack to cool completely
Get the orange curd ready while the cupcakes cool
Put the orange juice, orange zest, and granulated sugar in a small saucepan
Stir the mixture while heating it over medium heat until the sugar is gone
Whisk the egg yolks in a different bowl
Pour the hot orange mixture into the egg yolks slowly while whisking all the time
Put the mixture back in the saucepan
Cook over low heat, stirring all the time, for about 5 minutes, or until it gets thick enough to coat the back of a spoon
Taking it off the heat, add the butter and stir it in until it melts
After the cupcakes and orange curd have cooled, make a hole in the middle of each one with a small knife
Spoon some orange curd into the well
