A quick and tasty taco soup that is easy to make in a pressure cooker. Great for a cozy meal that fills you up.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn kernels, drained
- 1 can 15 oz diced tomatoes
- 1 packet taco seasoning
- 1 cup beef broth
- 1 cup water
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, chopped green onions, cilantro
Instructions:
Set the pressure cooker to saut mode and brown the ground beef
Add chopped onions and bell peppers, saut until softened
Stir in taco seasoning, black beans, kidney beans, corn, diced tomatoes, beef broth, water, salt, and pepper
Close the pressure cooker lid and set to high pressure for 10 minutes
Once cooking is complete, use quick release to depressurize
Serve the taco soup hot, garnished with shredded cheese, sour cream, green onions, and cilantro
